Easy Instant Pot Short Rib Stew

Picture this, there’s a chill in the air, you’re semi tired but have an ounce of energy and the fees on that Grubhub order is making your $18 meal a $31 dinner you pass on. That was me last night. After a long day of painting, I was hungry. I did have some short ribs and some veggies in the kitchen. And here, my loves, is the perfect cold weather stew in under 2 hours. Pull out that pressure cooker babe. Whether it’s an insta pot or other electronic cooker - get ready for a tasty treat.


Time
Active Prep: 35 minutes Cook: 1 hour 15 mins

Servings
2 plus a little extra for lunch the next day

Ingredients
First Set

2 lbs of short ribs (about 4 pieces)
4 cloves of garlic, crushed
1 medium onions, sliced
1.5 tbsp salt
1 tsp black pepper
A heaping tbsp of tomato paste
2 tbsp oil (canola, grapeseed, any high heat oil will do)

Second Set
2 tsp garlic powder
2 tsp onion powder
2 cups of beef broth
2 springs of thyme
6 pimento seeds
1 bay leaf
Salt and pepper to taste

Third Set
3 carrots
2 medium potatoes
1 celery stalk
1 finely sliced scallion

Last Set
2 tsp of cornstarch
4 tbsp cold water

Instructions

  1. Season your short ribs with salt and pepper on each side. Turn the insta pot to the sauté on the highest setting possible. When the pot is hot, add oil and brown your short ribs. 3 min per side or until browed should do. Do this in batches if necessary so you don’t overcrowd your pot. Set aside browned short ribs.

  2. Add onions to the instant and brown for 3-5 mins. I did this part with the lid on. Stir in tomato paste then add stock. Add in that second set of ingredients and be sure to taste. Need a little bit more salt? pepper? This is the time. And don’t forget the bay leaf! Add your meat and all of those juices that were in the plate you had it on. Pressure cook on the highest setting for 50 minutes.

  3. Quick release pressure. It’ll take at least two minutes to release. Cut your carrots into half inch rounds. Your celery and potatoes should be about an thick. Add carrots, potatoes and scallion. Pressure cook on high for 7 minutes.

  4. Quick release pressure and set aside meat and veggies them set the insta pot to sauté. Stir in cornstarch mixture and allow to come to a simmer. You can turn the pot off at this point. Add you meat and veggies and give it a good stir. Serve warm with a scoop of rice or on its own.
